Last week, I had the privilege of joining the ever-passionate Martin Denny, a master forager of wild, seasonal ingredients, on an extraordinary, flavour-filled journey across the Norfolk Broads. Together, we wandered serene woodlands and picturesque shorelines (armed with baskets and curiosity) in search of nature’s hidden gems. From sea purslane and marsh samphire to aromatic wild fennel flowers, every find sparked excitement for the menu possibilities ahead.
One standout moment? Discovering a patch of pineapple weed (yes, it smells as good as it sounds!). Martin shared its history and versatility, inspiring ideas for refreshing cocktails and delicately infused desserts. Back at the pub, our team is buzzing with plans for a supper club featuring a five-course, foraged feast – paired with sustainably sourced proteins and crafted in our fully electric, green-powered kitchen. It’s a versatile outdoor cooker that combines the functions of a grill, smoker, and oven, all in one beautifully designed ceramic vessel. Its unique shape and construction allow for precise temperature control, making it perfect for everything from slow-cooked meats to searing off the freshest seasonal Day Boat seafood that lands into Brixham Harbour.
At our pub, we’re committed to sourcing the best of seasonal and British ingredients, and the Big Green Egg aligns perfectly with this ethos. Tom and Chloe, a dynamic duo steering the farm’s operations, have devoted the past five years to refining their red deer herd through meticulous breeding methods and attentive care. Nestled across 135 acres of land, their farm is home to 160 breeding hinds across three herds, eight breeding stags, and a burgeoning population of over 130 calves and yearlings. Their profound knowledge stems from the hands-on experience of nurturing a thriving and sustainable environment, reflecting their dedication to conscientious farming practices.
Upholding a steadfast commitment to sustainability and animal welfare, they’ve redefined the landscape, once shrouded in lifeless trees and tangled brambles, into a vibrant and ecologically rich farmland. Leveraging a Countryside Stewardship grant, they’ve meticulously planted over 300 trees and 6000 meters of new hedge plants within a remarkably short span of three years. This transformation has fostered a remarkable surge in biodiversity, welcoming back diverse wildlife species that previously faced challenges thriving in the area.
